Wash lettuce to reduce risk of cyclosporiasis

The Michigan Department of Health and Human Services (MDHHS) has issued a safety advice for consumers regarding the cyclospora outbreak. The department is urging consumers to purchase whole heads of lettuce and other salad greens and avoid pre-packaged, bagged lettuce and salad greens. This advice includes discarding two or three outer layers of leaves and washing them under clean, running water. If cooking the greens, they should be cooked to 158 degrees or higher, which kills cyclosporiasis. The CDC and Food and Drug Administration also advise consumers to clean, separate, cook and chill their food. The FDA recommends four steps to food safety, including washing hands thoroughly and cleaning surfaces.
