Sarah Fennel, the creator of Broma Bakery, has shared her top tips for creating Bakery-style muffins with a "giant bakery-style top and super-soft bounce". Her go-to blueberry muffin recipe includes mixing melted butter, sugar, two room-temperature eggs, and a whole teaspoon of vanilla extract. She also adds Greek yogurt and buttermilk. Instead of overmeasuring flour, she suggests fluffing it into a measuring cup and leveling it off with a knife or weighing it on a scale. This method also allows for higher temperature and higher heat around each muffin.
