China has been named the top global producer of green chile peppers, a category that includes key ingredients in hot sauces, sauces, marinades, curries, quesos, and spicy margaritas. The Food and Agriculture Organization (FAO) of the United Nations ranked China's total output at 17,330,858 metric tons in 2024. India is the second largest producer, with an output of approximately 5,317,989 metric tons annually. The FAO's ranking is based on food production output and crop yield data across multiple years. China's dominance is attributed to a strong tradition and love for spicy peppers in its cuisine. From 2000 to 2021, China's production accounted for more than 30% of the total global chile pepper supply.
