Roy Morales, manager of Ruthie's Cafe in South Dallas, has turned his back on his 18 years of prison-gang membership. He and a team of ex-prisoners have been hired to staff the restaurant with help from the Unlocking Doors nonprofit organization. The restaurant serves grilled cheeses and other tasty American classics. Morales was the head of his "car" in prison, a chapter of a gang that trusts their leader. He has been able to resolve conflicts within the prison where tempers flare easily and escalate into violence. Morales recalls being transferred to a supermax prison after three years in prison. He was released from prison in 2023 and began working the program at groups like Alcoholics Anonymous and Narcotics Anonymous.
