D.C. restaurant, Rye Bunny, is set to open its doors doors on Thursday, serving high-quality food and high-touch hospitality without the full-service overhead. The restaurant is part of the trend of fine-casual restaurants becoming more casual as costs rise and diners pull back. The owners, Jon Sybert and Jill Tyler, are replacing their Adams Morgan spot, Tail Up Goat, with a more laid-back sibling, aiming for a more relaxed version of the old prix-fixe. The model supports a smaller team with competitive pay, benefits and PTO, and allows for seasonal comfort food and fun wines and beers, and wine prices start at $12 a glass and around $50 a bottle.
