Arizona baker bridges entrepreneurial divide with bread

Don Guerra, a baker in residence at Arizona State University's School of Transborder Studies, is teaching students about the importance of entrepreneurship and the cultural significance of bread. He has won a James Beard award for outstanding baker and is working with the U.S. Department of Agriculture to revive a local, healthy grain economy in southern Arizona. His breads are low-glycemic and gluten-free.
