Mike's Red Tacos, a popular taco joint in San Diego, has announced plans to expand into more than 200 locations across the country over the next several years. The fast-casual chain, known for its beef birra tacos and other iterations of the dish, has secured franchise development deals for new restaurants in major markets such as Chicago, Detroit, Twin Cities, Austin and Boston. Andrew Feghali, an investor and adviser for the expansion, helped start the business in 2021. The expansion is part of a larger effort to capitalize on birria's growing popularity with a strong social media presence. The company's birria recipe has been through about 50 iterations and is now on 3.7% of U.S. menus, a four times higher than in 2022.
