Michelin-Starred Eatery Announces Current Chef's Final Menu

The Id Est Hospitality Group has announced the final tasting menu of executive chef Byron Gomez, titled Exploring Costa Rica, which will be available from April 1 to June 30. The restaurant, which originally opened in 2019, originally served fresh-baked breads, raw-bar dishes, raw vegetable preparations, and wood-fired dishes. However, after a pandemic in which all restaurants were forced to pivot, Diaz de Leon took over and began a series of taco omakase pop-ups at Bruto, focusing on his Mexican heritage and fermentation. Gomez took over as Bruto's executive chef in January 2024, bringing a significant culinary shift to the restaurant. Despite this, he has never served a Costa Rican tasting menu from a fine-dining kitchen.
