The Japanese restaurant Ichika, the only restaurant in North Texas offering a kaiseki dinner, has opened in a discreet location in Headquarters Village on Preston Road. The owner, Chef Leo Kekoa, aims to bring the Japanese tradition of kiseki, a form of haute cuisine that prioritizes seasonal ingredients. Ichika's food is prepared in an artisanal manner and its menu changes with each season. The fish is brought from Tokyo's Toyosu Market and never frozen, ensuring the utmost freshness possible. The restaurant's ingredients are imported from Japan and Hawaii, and they use local ingredients like oranges or Wagyu beef. The chef is joined by veteran chef Chikao Kikuchi, one of the pioneers of North Texas' cuisine.
