The number of new restaurants in Denver is increasing as temperatures rise and the number of restaurants opening continues to grow. These nine are among the most anticipated restaurant openings this spring, with one set to debut in the next few months and another set to make its debut next week. Among the notable openings is Theo Adley's return to the Mile High, a James Beard semifinalist in the Best Chef: Mountain category, Heretík, which Robb Report has named among the fifteen most exciting restaurant openings in the country. Other notable restaurants include La Vie En Rose, a champagne bar from Scott and Nicole Mattson, and a new restaurant from Quincy Cherrett, set to open in the former home of natural wine bar Noble Riot.
