Spain is the leading producer of most of the world's olive oil, producing 854,000 tonnes in the 2023/24 crop year, more than twice the total output of Italy. Spain also produces around 60% of European production and 39.4% worldwide. The majority of Spanish olive oil comes from Andalusia, where 80% of the total production comes from the hojiblanca, picual, and arbequina olives. However, the bulk of this oil is imported into the U.S. due to California's domestic production, but this is a significant drop in production compared to Italy's 2 to 4 million gallons generated per harvest. The type of EVOO produced in Spain's Sierra de Cádiz is among the country's most flavorful, with the majority of it being grown under organic conditions.
