Taos couple brews big dreams at The Coffee Apothecary

The Coffee Apothecary in Taos, a coffee shop owned by Lydia and Pablo Flores, is set to expand its roasting operations and seating space. The coffee shop, which opened 10 years ago, roasts sustainably sourced coffee from countries like Guatemala, Mexico, Ethiopia and Peru. Stephen Welter, a certified Q Grader, joined the roasting operation last year to help refine its roast profiles to create more balanced, full-flavored coffees. The shop aims to establish direct trade with farmers in the future. The owners plan to host public cuppings to give customers a glimpse into their coffee making process.
