Matsuhisa Marks a Decade of Fine Japanese Dining in Cherry Creek

Japanese chef Nobu Matsuhisa, known for his innovative fusion dishes and innovative sushi techniques, has celebrated his 10th birthday with a private party in Cherry Creek, celebrating the start of his career with 250 guests including Mayor Mike Johnston. The first restaurant bearing his name opened in 1987 in Beverly Hills, serving sushi at a time when it was still not a common or mainstream dish. His creations include miso black cod, a dish he invented using a traditional Japanese technique to marinate fish using sweetened miso instead of sake mash, on cod, which became a popular dish in New York. Matsuhisis also developed his own style of cooking influenced by Peruvian influences while working at a sushi restaurant in Tokyo. He credits his open-minded approach to global foods as a key to his passion for his culinary innovation.
