A new study by the Radiological Society of North America has found that excessive consumption of ultra-processed foods may increase the risk of developing knee osteoarthritis, a chronic condition that affects millions. The study, published in Radiology, found that people who consume more highly processed foods tend to have higher levels of fat stored in their thigh muscles, regardless of their calorie intake, fat consumption, or physical activity. The findings were part of a broader study into how modern diets have replaced natural ingredients with more processed foods, which have been replaced by more chemically altered ones. The researchers found that this type of fat, known as intramuscular fat, may increase risk of osteoathritis.
