This year marks Louisa Kung Liu Chu's 10th anniversary at the Chicago Tribune. She has been the newspaper's critic since 2022 and started as a reporter with the Food & Dining team in 2016. For her milestone milestone, she asked 10 basic questions about the food icons of Chicago. Gus Rickette, the legendary founder of the Uncle Remus restaurants, turns 100 years old this year and co-founded the Black-owned house of fried chicken and mild sauce. Inocencio Carbajal founded Carnitas Uruapan in 1975 and has since expanded into a larger location in Gage Park and a flagship in Little Village.
