As celeb-backed PopUp Bagels expands in Texas, operator said ‘Dallas is the ideal place’

PopUp Bagels, a fast-growing franchise funded by actors Paul Rudd and Patrick Schwarzenegger, and football players TJ and JJ Watt, is set to open its first Texas restaurant in Dallas in 2026. The company plans to expand to 12 locations in Texas, with the initial shop set to be in Inwood Village near the Inwood Theater. The expansion is part of PopUp's plan to add 300 new locations. Founder Adam Goldberg started selling bagels from his Connecticut neighborhood in 2020. Private equity company Stripes bought a majority share in PopUp in 2023 and is also invested in boutique grocery store Erewhon, apparel company Vuori and shoe brand On.
