Downtown Fargo's Icelandic-inspired eatery, So+Lo's, set to open

Iceland-inspired restaurant, So+Lo's, set to open its doors at 629 1st Ave. N. in Downtown Fargo on April Fool's Day, will be run by Jen Nelson and husband/chef Chris Nelson. The restaurant, which pays homage to Jen's Icelandic heritage with a color scheme that incorporates lava-red (for Iceland’s volcanos), blue for the North Atlantic Ocean, yellow for its “midnight sun, green for moss, and purple for its omnipresent lupine. Specialties include skyr (pronounced “skeer”), breakfast bowls with house-made granola and fruit or pannekucher, a thin, crepe-like pancake from the land of fire and ice. The Nelsons also plan to serve rullupylsa (a rolled, spiced meat similar to porketta), which they will only serve once a week or so. The space is decorated with artist Jen's ceramics and decorated with colorful ceramic tiles. The food is priced at $5 for a cup or half-sandwich and $8 for a skyr breakfast bowl. The pair are hoping to make the business more accessible and affordable.
