A study by the EAT-Lancet Commission found that following the Planetary Health Diet more closely had better overall diet quality and a smaller environmental footprint. The diet, which emphasizes whole grains, fruits, vegetables, legumes, nuts, and unsaturated oils, restricts red meat, added sugars, and refined grains. The researchers assessed 571 adults using the planetary Health Diet Index and the Healthy Eating Index-2020. Higher adherence to the diet was also linked to lower carbon footprints and lower water footprints. While nutrient intake improved across higher adherence levels, vitamin B12 intake tended to decrease among those most closely following the diet as meat consumption was limited. The research suggests how to put this into practice.
