Ultraprocessed foods may hurt muscle health, study finds

Eating too much ultraprocessed food could negatively impact muscle health, according to a new study published in the journal Radiology. Ultraprocessed foods, such as salty snacks, sugary drinks and fast food, make up the majority of calories in Americans' diets. The study, led by Dr. Thomas Link from the University of California San Francisco, found that diet also has a significant impact on musculoskeletal health. The research involved data from 615 people enrolled in the National Institute of Arthritis and Musculokeletal and Skin Diseases’’ Osteoarthritis Initiative. Higher levels of intermuscular fat are a risk factor for knee osteoarth arthritis, and MRI scans of their thighs revealed that those who ate diets high in ultraprocesses had more fat streaked through their muscles. The researchers are still trying to understand the phenomenon.
