Fiona's Filipino Cuisine owners hope to find fans in Fargo

Fiona Rix and her husband, Brian, have launched Fiona's Filipino Cuisine in Fargo, aiming to introduce their native dishes to the public through pop-ups, catering gigs and possibly even her own restaurant. The couple custom-ordered a food trailer and plan to bring culinary delights from the Pearl of the Orient Seas to the Fargo-Moorhead community this spring. Unlike other Asian cuisines, Filipino food is defined by its balance of asim (sour), alat (salty), or tamis (sweet), flavors. The country’s unofficial national dish is adobo, which features meat marinated and stewed in vinegar, soy sauce, garlic, bay leaves and peppercorns. Despite criticism, Filipino cuisine has been praised for its adaptability and adaptability.
